My stepkids’ dad was the head chef at a restaurant, and a few summers ago he accidentally ordered kangaroo. He asked if I wanted I wanted some. I asked him if it was lean, and he said yup.
I sliced it super thin, marinated it for a day, and smoked it in my Weber kettle. It was the best damn jerky I’ve ever had in my life.

For those asking, it tastes like a cross between beef and venison.
It’s very lean (less than 2% fat), high in protein and iron.
Because it’s low in fat it becomes extremely tough if overcooked.
It’s best used in things like stir-fries, stews or marinated fillets.
It’s alright for stuff like sausages or burgers but needs to be mixed with something with more fat content so they don’t dry out. 👍

There’s a burger place in town(California) that has exotic meat burgers. Kangaroo isn’t terrible but it’s not great. That’s probably a good price for it

If you do need to eat meat, it’s one of the most ethical meats out there as it can only be sourced from licensed rangers that strategically cull wild ones to keep their populations at sustainable levels.

I’ve cooked and eaten Kangaroo extensively, from mince to fillets.
It’s extremely nutrient dense, lean and a bit stronger in flavour than beef.
Being so lean you need to be careful to not cook it into boot leather.
Kangaroo is fantastic.
They’re also overpopulated here and only wild farmed.

We have a restaurant in Greenville SC that serves kangaroo strip loin. It was delicious and reminded me of filet minon.
I used to work for an Australian-owned cafe (in the US), and we sold kangaroo and emu burgers. The owners said kangaroos in Australia are as common as deer in the US.
