It’s theorized that the first to eat an oyster was a woman as it would’ve been a gathering job, not a hunting job. And it was monumental at the time as the populace had no means of fishing so bodies of water were kind of a food desert to early humans. Also shows that there was an understanding of low and high tides that was needed to know when to harvest the oysters.
Other apes eat oysters, so maybe it wasn’t a human discovery but we were already doing it by the time we were humans.
Edit: Some monkeys too. And raccoons. If you’re an omnivore living near a tidal body of water, I guess shellfish are just fair game.

Early humans or homo species regularly ate snails and insects. I don’t think an oyster would be too much for them. Food is food and everything was game in those days.
