I order 80lbs of bananas every week for banana bread (bakery) and this has been a trend the last month or two. We get a few bunches that simply do not ripen. They start to go bad before they go yellow.

Put a plastic bag around them. That’s said if they’ve been cold enough they wont ripen at all. Bananas that have been kept in the fridge never ripens for an example.

There is a type of banana that still keep the outside green when ripe, and it looks very similar to these in pic.

Could be harvested too early, exposed to cold temperatures during transport that halted ripening, or lacked sufficient ethylene gas treatment to activate the ripening process. Also they could be plantains but don’t look like it.
