    1. meat ice and spices are cut up in a cutter to fine paste and then filled into sausage skins

      after that sausages are either boiled or smoked in chambers

    2. I doubt you’d say that if you were back in 1906 USA reading Upton Sinclair’s “The Jungle”. The book was intended by Sinclair to highlight the plight and harsh conditions of workers, but the public focused A LOT MORE on the descriptions of contaminated, rotten, diseased meat(*) being included in the food produced by the meat industry.

      This led to the creation of the agency that will later become the FDA and laws regarding food safety being established.

      Compared to then, there’s been much improvement and I’m not too worried about what goes into sausages (but then there’s the orange one who is saying such food safety laws don’t need to be enforced…).

      (*) I recall reading meat pieces that fell onto the floor (where workers are walking around) being swept into a pile (along with other dirt from the floor) and then added back into the meat production line.

    3. My favorite meal is Tripe, also a lot of American will be disgusted but Rabbit mustard papillote and horses sausages are two of my favorite meal
