Honestly American chefs too. The Europeans brought beef, pork, chicken, eggs, milk, cheese, citrus fruits, sugar, and wheat.
I’m sure a lot of them were too busy getting murdered or dying of influenza to really appreciate it, but still.

It’s hard to explain just how bad Mexican food would be without this. The only thing that is really recognisable is the use of corn, just about everything else is the result of the exchange
