It’s more complicated than that.
The Southern Democrats have indeed often been and most recently have been the most explicit vanguard of conservatism and racism as a single political bloc, but the Northern Democrats and Southern Democrats do have some throughlines dating back to at least Jackson if not before.
In general, every incarnation of the Democratic Party had large sections of its platform dedicated to preservation of minority rights vis a vis a large dominant culture, the difference is that originally under Jefferson and Jackson that was poorer classes, then it shifted to White Planters manipulating said lower white poor classes as well as white immigrants in urban environments, and so on, but that initial economic and political argument against “the elite” was pretty consistent just reinterpreted and manipulated by different party-factions over the centuries. Jefferson, Jackson, Williams Jennings Bryan, these all had similar strains of thought regarding what the Southern Democratic Party should be that have anti-state and anti-capitalist messages within them. The Democrats have had multiple enemy parties over the years and while sometimes those enemies were absolutely in the right such as Civil War Republicans (and especially Radical Republicans) many or most of those political forces were also friendly to and supportive of ideas like nationalism, a single dominant culture to which all should assimilate, and friendliness to the large business interests.
More to the point, the Northern Democratic Party basically died on a local level after the Civil War. In multiple states such as Ohio, it was a puppet that the GOP literally funded to paper over their own internal issues, and it was with the failure of Teddy Roosevelt’s Progressive Republicans that resulted in many Northern Progressives and Progressive Republicans basically just taking over the nearly dead corpse of the Democratic Party in their states, entirely taking over and transforming it, and then coercing Southern Democrats to follow them in their goals out of sheer economic and class interests (which, as stated above, were always a core part at least rhetorically for the Democratic Party). Black Southerners largely switched to the Dems for economic reasons in the Great Depression, which was then deepened when the new party system took shape as Southern Republicans of the old generation were basically forced out and either became Democrats or were replaced with defecting Dixie Democrats becoming New Southern Republicans.
To be clear, the Party Switch is definitely a genuine thing. It’s just not the first one either, as Northern Progressive Republicans switched to the Democratic Party before the Dixiecrats switched to the Republican Party, it’s just that in both cases there were still some throughlines between all incarnations of the Democrats and Republicans, it’s more a question of the rest of the platform.

The only difference is, they called themselves Democrats until the Civil Rights Era, and since the Southern Strategy they’ve all been Republicans.

Those racist Dems that were against the Civil Rights Movement,very publicly withdrew from the party, and joined the GOP after the Civil Rights Act was passed.
And they were replaced by black and white politicians who were part of smaller state parties that were pro-civil rights.
There was a whole contested DNC convention in 1968 where the racist and non-racist state parties fought over who would represent their state.
The fact is that people who voted Democratic in the south before the 60s simply switched to voting Republican now. The party itself only changed because the people within it did.

This true to an extent. Back in the 1800’s the Democrats were more conservative. But what isn’t explained here that after Abraham Lincoln signed the emancipation proclamation. A lot of those Democrats switched to the Republican party keeping those values from the old party.
