Ilan Ramon was the first Israeli and first Jew in space. He flew on the last mission of the Colombia Space Shuttle in early 2003.
Ramon, originally a fighter pilot, was the first astronaut in history to eat only Kosher food and follow Judaic Shabbat (Saturday) laws that prohibit any sort of work on that day. He asked multiple Rabbis in advance how to keep the holiness of that day without a day and night cycle and the solution they gave him is to keep track of the passage of time. After 144 hours (exactly six days) Shabbat will begin for him.
Unfortunately the space mission ended in tragedy as the shuttle disintegrated while entering the atmosphere and all seven astronauts on board died.
Ramon’s oldest son, Asaf Ramon, also became a fighter pilot like his father and tragically died on a training mission accident in 2007.
