I sometimes think about how the introduction of the TSA security line must of quadrupled the airport’s profits by artificially creating a captive market.

While it is a rip off its the effect of basic Supply and Demand.
When you are in an airport you pretty much stuck with those choices because it wouldnt be cost or time effective to leave the airport to go get cheaper food outside the airport. So every vendor will charge a premium amount and most people will pay it because they have to if they want to eat or drink. When you restrict the supply and options, prices go up.
