Good stories with interesting characters are hard to write. And when the story is complete, adding more just becomes fluff. In addition, good stories are often more polarizing. Simple slop stories have mass appeal. So its easier to get an audience and easier to keep writing.
Not to mention, even people who dont like it will often still talk about it and even watch it just to get views from other people who all dont like it but tune in nonetheless. The only bad publicity for them is no publicity. Everyone wants to be a youtube critic and would rather criticize bad media than sing the praises of good media.

Good anime getting a worse ending thanks to the studio going off script and making shit up (bonus points if it ends with an equally non canon movie.)
Or it proceedes as thr manga dictates but the animation quality goes downhill so fast, it makes queen bee animation look like high quality (rip one punch man. You had a good run)
