Reminds me a story about a french physicist who developed one of the first ever steamboat prototypes, and while he was transporting it, the German guild of boatmen seized and destroyed it because it saw the technology as a threat to their monopoly.
There are some accounts to refute that story, I am not entirely certain how true is it. But the point is, that the guild system is a product of a pre-industrial world, it was slow and unfit to innovate and adapt to a changing world and largely dragged progress back for everyone. They were keepers of trade secrets and ruthlessly opposed any competition from the outside.
The modern counterpart of labour unions is a much better option today, that focuses more on the worker’s wellbeing than the craft itself.

Then they could start fighting. We would call it… Guild Wars. And after some time, who knows, there might even be Guild Wars 2.

We still have guilds over here. Honestly, while they have some advantages (guild licensed craftsmen are usually reliably good), they also have a lot of disadvantages.
For example, they tend to be extremely conservative and exclusionary old boy’s clubs. Women had to fight tooth and nail to be accepted as apprentices in many crafts, nevermind journeywomen. Also immigrants. And it means that earning your master degree can be extremely political. And there’s so many pointless ceremonies. Including hazing. And of course you often have to pay membership fees to get anywhere in your profession.
