There are several factors to consider.
The harsh climate, poor road networks and mountainous terrain made Italian equipment inadequate and mechanized units basically useless.
Support from Albania was limited and Mussolini was overconfident, thinking Greece would collapse quickly.
While the Greeks were fighting to protect their homeland, Italians saw little reason to be there and had low morale. I’d suggest the movie Mediterraneo which deals with exactly this topic.​​​​​​​​​​​​​​​​

In what world? Italy invading Greece with 2.5 million troops and 2000 tanks? Italy deployed a fraction of a fraction that, given that it was also fighting in East and North Africa at the same time. The Italians invaded Greece with one army Korps, that is to say about 30k troops. Later on, the Italian forces grew to be hundreds of thousands, but that was when the Greek counteroffensive in southern Albania was stopped and the war turned into a stalemate, it was past the point where they could have made a breakthrough.

Italy didn’t have millions of soldiers in Greece,and it only had several hundred light tanks (actually mostly Tankettes) there as well.
In point of fact, Greece actually outnumbered Italy on the front line at the start of the war due to Italy’s abysmal planning, to something of the effect of a 2-1 advantage in manpower (after conscription,) along a well-prepared defensive line supported by longer range artillery than the Italians had.
This is all exactly as what could be expected from a country that had been preparing to fight Italy for almost 20 years, which makes it funny that Italy hadn’t expected resistance at all.

The Greeks meeting the Italians and a bit of Nazi luck ended up dooming them.
Fortifying the mountains was probably the better play but hindsight is 20/20.
