    1. I don’t understand one single thing about this recipe! Separate the eggs for an omelet? How do you make “4 shallow nests” in a pan full of whipped raw egg? Cook until omelet “breathes”? THEN bake it for 15 minutes? Serve with cheese sauce filled with peas? How is this an omelet if you don’t fold it? It’s like a flourless Dutch baby mostly made of peas. How do you serve it? If you tried to cut it into four wedges, I’m sure the peas would breach the baked egg levee and you would end up with a big mess of peas. It’s four servings, meaning each serving is 1/4 cup of peas plus less than 1 egg. How is that a breakfast?

      This is madness. I’ve seen a lot of crazy-ass vintage recipes on this sub but this is the one that really broke my brain.
