The mongols really dropped the ball here. They could have kidnapped some kinghts and samurai, had them fight and recorded the results. Kinda like 13th century Pokemon.

Very broad terms. Samurai has swapped it’s meaning around over a long period, and what a knight is also changed around a lot depending on time frame and region. And about the time the japanese were using arquebus there were already fairly advanced early firearms on battlefields in europe, and several centuries of hand cannon and non-matchlock rifles. Rifles existed alongside plate armor for quite some time and you can see the change in design elements to make bullets slide off them more easily. You’re better off arguing about the relative quality of steel in both regions, or about the type of armor used at certain periods.
The chosen weapons on both sides for the longest time was very similar in lance/spear + horse. Samurai usually also had great skill with bows as a part of their training, again depending on the period.

knights and samurai were more nobility titles, an upper cast ruling over the peasants. they were as honorable as you would pick honorable people from a random group, in that some were good people while others were complete pieces of shit.
some of them didn’t even know how to fight at all and would only cosplay in times of war because knighthood or samurai is passed down hereditary. obviously, some heirs would be complete buffons.
