So this is an older video, and this is an experiment that has been repeated many times.
You don’t need to keep the egg in the shell at all, this experiment is often performed entirely in glass bowls with a plastic membrane over the top so you can watch the progress of gestation from all sides.
I encourage everyone to look this up for themselves, because there are a lot of neat videos and how to’s and they all pre-date AI.
This is sometimes done in classrooms so children can see the developing embryos, but it is difficult to keep the embryo alive through the whole process because the shell protects the yolk from drying out while keeping the contents sterile, and recreating a similar growing environment isn’t easy.
