This is because as evaporation occurs, the water can no longer hold the amount of dissolved salt, and so excess salt slowly crystallizes out in the form of cubes.
The reason why this doesn’t usually happen is because the water evaporates too quickly. Thus thousands of tiny crystals form at once, and they just look like fine powder.
I think these crystals are pretty neat. And perfectly lickable.
