It looks awfully painful and stressful like pulling out your entire body style while collapsing your lungs and internals to do this. I have cleaned and cooked crabs before and yeah, basically it’s exposing the entire gut system here to allow it to shed..

Are the pincers just cartilage at this point? Or would they be equally as painful as if the shell were still on?

Grabbing them at this stage and freezing them is how we get soft shell crab.
For a really long time I thought there was just a species of crab that was unfortunate enough to have soft shells.
